Marinated Pork Filet with Mamzells Grace Potatoes

Marinade
(Ideally 4 or more hours before cooking)Ingredients
- 2 tablespoons of olive oil
- Lemon zest and juice
- A few sprigs of fresh oregano
- 2 chopped garlic cloves
- 1/2 thinly chopped shallot
- Fresh ground pepper
- Salt to taste
Pork filet and Mamzells Grace potatoes
Ingredients
- Feta cheese
- A medium-size pork filet
- Mamzells Grace potatoes, blanched and halved
- A few sprigs of fresh oregano
- 2 fresh tomatoes
Preparation
- Mix all the ingredients in order to prepare the marinade. Use a re-sealable plastic bag within which to properly marinate your meat. Ideally, let the pork marinate for 4 hours or more before cooking.
- Place your pork filet on the baking sheet. Add Mamzells Grace potatoes all around with crumbled feta cheese. Drizzle with olive oil and the marinade. Salt and pepper generously and bake for 25 minutes at 200°C (400°F).
- Once cooked, remove the baking sheet from the oven and begin plating.
- Add a tomato and feta salad with balsamic vinegar reduction to your filet and Mamzells Grace potatoes.
